01The short answer
Three findings, ordered by how much they should change what lands in the trolley.
01The charred Moroccan chicken is not the product to worry about most.
It is not red meat and it is not cured, so no IARC carcinogen group applies to it at all. The char does contain heterocyclic amines and polycyclic aromatic hydrocarbons, which are real mutagens — but the product is marinated, and marinating before grilling is one of the few interventions with hard measured evidence behind it: a 92–99% reduction in the main heterocyclic amine in flame-grilled chicken.
02The “safer” sliced chicken is the one Group 1 carcinogen in the basket.
Woolworths Sliced Roast Chicken Cold Meat 125 g is cured with sodium nitrate and sodium nitrite. IARC's definition of processed meat explicitly does not exclude poultry — and processed meat is Group 1, carcinogenic to humans, with sufficient evidence for colorectal cancer. It also carries the highest sodium of the six at 724 mg per 100 g. Swapping charred chicken for nitrite-cured sliced chicken moves you toward the classified hazard, not away from it.
03The measurable daily harm is sodium, not carcinogens.
A 250 g pack of Moroccan Chicken Mini Fillets carries 1,298 mg of sodium. Split two ways, that is 649 mg each — 32% of the World Health Organization daily adult limit in one portion. Certain and quantified, against a heterocyclic-amine exposure that is uncertain and modelled. For a Type 2 diabetic in particular, the sodium is the number to watch — but at half a pack it is a manageable third of the day, not the two-thirds a whole pack would cost.
Bottom line
Best swap: Sliced Butter Basted Chicken Breast 140 g (R42.99) — no nitrite, no nitrate, no smoke, no flame char, and the lowest sodium of every ready-to-eat option at 351 mg/100 g. Same price as the cured one.
Best overall: plain Skinless Chicken Breast Fillets — ingredients: “CHICKEN BREAST FILLET (100%).” R129/kg against R360/kg for the mini fillets, and you control the cooking temperature, which is the whole ball game.

Note where those words sit — ninth in the list, four lines below “roast”. The word “roast” on a deli label describes a flavour step, not a preservation method.

The caveat that never makes the headlines

The nitrite mechanism — relevant only to the cured cold meat

Under acidic stomach conditions, nitrite generates nitrosating agents that react with secondary amines and amides to form N-nitroso compounds, some of which are established carcinogens. The process intensifies when extra nitrate or nitrite is consumed — which is exactly what a nitrite-cured meat delivers, alongside abundant meat protein amines.
04What the char contains, and how much

Heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) are chemicals formed when muscle meat, including beef, pork, fish, or poultry, is cooked using high-temperature methods, such as pan frying or grilling directly over an open flame.

The Woolworths Moroccan marinade contains lemon juice, canola oil, garlic, salt, turmeric and sugar — closely matching what was tested, and matching the two marinade types the National Toxicology Program singles out as effective: “PhIP and MeIQx concentrations were reduced by teriyaki sauce or turmeric-garlic sauce, but increased by a honey barbecue sauce.”
You can see the dose
A grilling-temperature study measured total heterocyclic amines across 150 °C, 190 °C and 230 °C. The worst case — 230 °C for 15 minutes, skin on, closed grill — reached 764 ng/g in the skin, against 380 ng/g for the skinless surface on an open grill. The authors found a strong correlation (r > 0.7) between “the color changes perceptible for the consumers and the HCA formation”.
Two things follow. The visible char is the dose indicator — darker means more. And it concentrates in the skin and the surface, which is why a skinless fillet removes the worst compartment entirely.

A charcoal braai without a drip tray produces roughly 3.5× the polycyclic aromatic hydrocarbons of an electric contact grill. Which means the Woolworths instruction on the butterflied chicken — “Braai for 60 minutes” — is the highest-exposure cooking scenario in this entire document, considerably worse on that axis than the pre-grilled mini fillets.

The uncertainty band is a full order of magnitude wide, and it is wide because the science genuinely is. Four things push this specific product toward the low end: it is marinated, skinless (skin is where the compounds concentrate), lean breast meat (little fat to drip), and factory-grilled to a controlled time and temperature rather than braai'd until someone remembers it. The grill striping on the pack photo is consistent with the lower half of that range.
Sodium — the exposure that is certain, not modelled
The World Health Organization recommends “less than 2000 mg/day of sodium (equivalent to less than 5 g/day salt)” for adults, and lists gastric cancer among the diseases associated with high sodium intake.

At half a pack the carcinogen question all but evaporates and two ordinary things take over. The sodium is fine at this portion but not free — 649 mg is still a third of the day, so what goes alongside it matters more than the fillets do. And the convenience premium is real money: at twice a week for two people, the gap between these and plain fillets is R115 a week, about R6,000 a year.
Frequency, if you want one rule
The only study that flags poultry at all draws its line at 300 g a week, and it counts all poultry, not just this product. At 125 g a portion that is twice a week (250 g) under the line, three times (375 g) over it — before any roast chicken dinners are counted. Twice a week is the comfortable answer, and it is a weak study besides.
One label gotcha worth knowing: the pack's own nutrition table declares a 50 g serving — five servings to a 250 g pack. Nobody eats 50 g of chicken. Every “per serving” number on that label is two and a half times smaller than the portion actually eaten here, which is exactly how a 649 mg sodium hit gets printed on the back of a packet as a harmless-looking 260 mg.
What a daily sandwich of the cured cold meat actually costs
The pack is 125 g with a stated minimum 8 slices — about 15.6 g a slice. IARC's 50 g/day threshold is therefore 3.2 slices: an entirely ordinary sandwich. Applying the 18% figure to South African baseline rates:

Read honestly: a daily nitrite-cured chicken sandwich sustained for a lifetime moves a White South African male from about 1 in 32 to about 1 in 27. Real, but modest — roughly one extra case for every 178 people who do it. That is the correct emotional weight. Worth changing a habit over; not worth anxiety about a sandwich you ate last Tuesday. CANSA's own caveat applies: the registry is “outdated” and “known for under reporting”.
The one study that looks directly at eating chicken daily

Directly relevant: 100 g of chicken a day is 700 g a week, more than double the threshold. But treat it with real caution. The authors' own limitations include the “absence of information on the consumption of processed poultry” — so the finding may be picking up exactly the nitrite-cured deli products flagged here rather than chicken as such. The all-cause confidence interval's lower bound sits exactly on 1.00, the women's result was not significant, and the World Cancer Research Fund has never found poultry to be a cancer risk. One preliminary study, contradicted by the broader literature.
06What it does to the body long term
What “carcinogenic” means at the cellular level, quoted from the National Toxicology Program's Report on Carcinogens.
Step 1 — your own liver makes the carcinogen

The usual dismissal — “those were absurd animal doses” — does not fully hold. The adducts demonstrably form in humans at ordinary dietary intakes, and humans activate these compounds more efficiently than the rats do.
Step 3 — genetics decide how much it matters to you

Sliced Roast Chicken Cold Meat 125 g

The only product here that is a Group 1 carcinogen by IARC definition — cured with sodium nitrate and sodium nitrite. Highest sodium at 724 mg/100 g. Sufficient human evidence for colorectal cancer.
You braai it for 60 minutes — the highest-polycyclic-aromatic-hydrocarbon cooking method measured, roughly 3.5× an electric grill if you use charcoal without a drip tray. Contains sulphur dioxide. Fine as a weekend braai, not a daily food.
Visible char means real heterocyclic amines, but it is marinated (92–99% PhIP reduction documented), skinless, lean, and carries no nitrites. Split two ways it is a sane portion: 649 mg sodium, 31 g protein, 1.2 g carbohydrate, 172 kcal. What actually argues against making it a habit is cost — R45 a head against R16 for the same weight of plain fillet.
99% chicken, no nitrites, no phosphates. But “wood smoke” puts it inside IARC's processed-meat wording, and smoke is a source of polycyclic aromatic hydrocarbons.
No nitrite, no nitrate, no smoke, no flame char, no colourant. Oven roasted. Lowest sodium of any ready-to-eat option at 351 mg/100 g — less than half the cold-meat version, at the same price.
Ingredients, in full: “CHICKEN BREAST FILLET (100%).” Nothing added. About R129/kg against R360/kg for the mini fillets — 64% cheaper per kilogram — and you control the cooking temperature, which is the entire ball game.
Cut off the visibly blackened edges. Visible darkness correlates strongly with heterocyclic amine content and the compounds sit on the surface. Highest yield, lowest effort.
Reheat gently — oven or pan under 200 °C, never a second grilling. These are already grilled; putting them back on a flame compounds the dose for no culinary benefit.
Don't make gravy from the drippings. NTP: “Pan residues usually contain higher HCA concentrations than the meat itself.”
Halve the portion, pad with vegetables. Fixes the sodium and the heterocyclic amine dose in one move.
Rotate rather than repeat. Alternating between the mini fillets, plain home-cooked breast and the butter-basted slices keeps every exposure well below the thresholds here.
Broccoli, genuinely. Knize 2002 fed volunteers chicken before and after three days of steamed broccoli and found it “may affect both the rate of metabolite excretion and the metabolic products of a dietary carcinogen”. Preliminary and small, but free and harmless.
Use a drip tray on the braai — or an electric grill, which measured at roughly a quarter of the polycyclic aromatic hydrocarbons.

Note what the World Cancer Research Fund does not say. There is no limit on poultry, and no limit on grilled or charred meat. Their limits are on red meat and processed meat. That is the entire hierarchy of concern, from the body whose job it is to rank these things.
08Gotchas
The “healthier” sliced chicken is the classified carcinogen
Swapping charred Moroccan fillets for Sliced Roast Chicken Cold Meat moves you from an unclassified product to a Group 1 one, and raises sodium from 519 to 724 mg/100 g. You would be making the problem worse while believing you fixed it. Buy the Butter Basted version instead — same price, no curing agents, half the sodium.
“Roast” on a deli label does not mean unprocessed
The word describes a flavour step, not the preservation method. The curing agents sit four lines further down the ingredient list. Always read to the end for “curing agents”, “sodium nitrite”, “sodium nitrate”, or E249–E252.
Smoking counts as processing under IARC's definition too
The Free Range Smoked Chicken Breast has no nitrites and is 99% chicken — genuinely clean — but “wood smoke” falls inside IARC's wording (“…salting, curing, fermentation, smoking…”). Better than the cured one, but not the same category as plain roast chicken.
Celery extract is a recognised natural nitrate source — and it's in two of these products
Celery extract is widely used in “clean label” curing precisely because it supplies nitrate that converts to nitrite. It appears in the Moroccan Mini Fillets brine and the Butter Basted slices. However, Woolworths declares explicit “CURING AGENTS (SODIUM NITRATE, SODIUM NITRITE)” separately on the cold meat, which suggests the celery extract elsewhere is used for flavour and antioxidant effect rather than curing. Status: could not verify — the nitrate load of Woolworths' celery extract is not published. Flagged as an open question, not a finding.
The sodium is the certain harm; the carcinogens are the uncertain one
A whole 250 g pack is 1,298 mg sodium — 65% of the WHO daily limit before anything else on the plate. Split between two people it is 649 mg each, or 32%, which is a normal-sized dent rather than a problem. Portion is doing more work here than any chemistry: the same product is either a third or two-thirds of your day depending purely on how you divide it. WHO links high sodium to hypertension, cardiovascular disease and gastric cancer.
Marinades cut PhIP but can raise MeIQx — and MeIQx is the one the big cohort implicated
Salmon 1997: marinating cut PhIP by 92–99% but MeIQx “increased over 10-fold” at 30 and 40 minutes, driven by the sugar in the marinade. NIH-AARP found MeIQx significant (HR 1.19) and PhIP not (HR 0.99). Marinating is still net-positive — total heterocyclic amines fell 87–97% in every condition tested — but it isn't a clean win, and sugary marinades are the worst kind. The Woolworths marinade contains sugar, sucrose and starch.
“IARC Group 1” does not mean “as bad as smoking”
IARC state this explicitly. Group 1 measures evidence strength, not risk magnitude. Processed meat: ~34,000 deaths a year worldwide. Tobacco: ~1,000,000. Don't let the classification drive disproportionate fear or disproportionate complacency.
The 2025 poultry study could not separate plain chicken from processed chicken
Its own limitations section admits the “absence of information on the consumption of processed poultry” — so the doubled gastrointestinal cancer mortality above 300 g/week may be measuring cured deli chicken, not roast chicken. Don't cite it as evidence that chicken is dangerous.
Irradiated spices are a non-issue
The label declares “IRRADIATED SPICES” and this reliably alarms people. Food irradiation does not make food radioactive and is not a carcinogenic hazard — it is a sterilisation step, unrelated to everything else here.
Prices and recipes change
Woolworths' own disclaimer: “product recipes and ingredients change from time to time. Therefore, it is recommended that this information is used as a guideline only and that product labels are read with care.” Re-check the cold meat's curing agents on-pack before treating this ranking as permanent.
